This restaurant owner suffered water and smoke damages throughout his kitchen due to a fire on his roof top HVAC unit. In this picture you see the drop ceiling tiles gave well and fell due to water damages and the weight of the water. As the ceiling tiles acted as a sponge eventually the tiles and tile grid was not able to hold the weight. Emergency tarping of the roof, water mitigation and smoke cleaning was a requirement by the local health department prior to the consideration of allowing this customer reopen for business. Many people do not realize the effects of smoke damages, all open food containers, or bags of stored food which was porous had to be disposed.
